Chicken Fajita Bake

Hola señors and señoritas! Today’s recipe is brought to you by my love for all foods Spanish! I know I sound like a broken record, but this dish is super easy and super delicious. You guys wouldn’t see it here if it weren’t! But seriously, you only need 4 ingredients!

Here’s what you need:

  • 2 cans chunk chicken
  • shredded cheese (I would typically use fiesta blend, but any kind is fine)
  • 1 can jumbo biscuits (8)
  • 1 package fajita seasoning

Preheat your oven according to the biscuits package directions.

First, heat a nonstick skillet over medium heat. Add your chicken with 1/2 cup of water and half the package of fajita seasoning.

Cook until brown and the chicken is well coated with seasoning.

Transfer the chicken to a glass dish.

Next, cut your biscuits into quarters.

Move the biscuits to a bowl and add the remainder of the fajita seasoning. Put a lid on the bowl and shake until the biscuits are well coated.

Top the chicken with the quartered biscuits. Be sure to cover every bit of the chicken.

Bake until the biscuits are browned.

Top generously with shredded cheese.

Bake until cheese is melted.

Jase even loved this one, and he’s mostly a chicken nugget kid. It’s definitely a family favorite!
