T. G. I. F. Can I get an amen?! It hasn’t been a bad week, but it’s been a long one! But, I’m not complaining- I got a super awesome job offer this week and I can’t wait to start it. The company is great and the people are greater. I’ll be getting off at 4 every day AAAAND (my favorite part) I can wear jeans… Every. Single. Day. 🙌🏼
Today has been a busy and productive day, but I finally just sat down for the first time and am finally sharing a super delicious meal with y’all that I made for the first time yesterday.
This dish is cheesy and saucy and sweet. Never have I ever cooked tortellini before. So, when making this dish, it’s important to get the exact noodles that I did. I’m also going to say the sauce needs to be the exact same also.
The tortellini I chose was cheese and spinach. After it’s cooked, it tastes a bit like ravioli. The spinach in it was perfect combined with the Ragu sauce I used. I always buy chunky spaghetti sauce – it’s the only ones that aren’t watery. This one in particular is sundried tomatoes and sweet basil. Sweet being the key word. You can definitely taste the sweet.
What you need:
- One jar Ragu Chunky Sundried Tomato and Sweet Basil sauce
- One bag Barilla Spinach and Cheese tortellini
- Shredded mozzarella
- Grated Parmesan
First, preheat your oven to 350. Then, cook your tortellini according to packaging instructions.
Just a side note: this tortellini smells amazing!
After it’s cooked, drain it. Drain until no water drips from your strainer when you shake it. Then, empty the tortellini into s large bowl and cover with your whole jar of Ragu and mix. Pour mixture into a glass baking dish.
Top with shredded mozzarella and grated Parmesan.
Bake at 350 for about 10-12 minutes, or until cheese is totally melted and starts turning brown.
As always, this recipe is easy. Easier than easy. Minimal effort required!
Tonight’s menu consists of bacon and ranch chicken wraps. Stay tuned for the recipe! But for now, it’s on to pulling safety pins off of all the clothes I bought for little man at kids market this morning. My absolute least favorite.
