Meatball Sub Bubble-Up Bake

Today was the Monday-est Monday ever. By 12:00 I was already thinking about dinner and a bubble bath. Dinner is done and gone so now it’s time for that bubble bath.

But first, I just have to share today’s dinner recipe: Meatball Sub Bubble-Up Bake. Easier than easy and yummier than yummy.

Here’s what you need:

  • 16 oz package of meatballs (you can use Italian style, but the homestyle kind are my favorite)
  • Italian style shredded cheese
  • 1 can biscuits (I use jumbo butter flavored)
  • 1 jar marinara sauce
  • Basil
  • Parmesan cheese, grated

Preheat oven to 350 degrees.

Start by separating biscuits out and cut them each into 6 pieces.

Put the biscuit pieces into a large mixing bowl. Add the meatballs and marinara sauce and mix until the biscuits and meatballs are coated well.

Pour the mixture into a 9×13 dish and spread evenly.

Top with cheese. Don’t be shy. I think I used about a cup to a cup and a half. There’s no such thing as too much cheese.

Put it in the oven for approximately 45 minutes, or until the biscuits are baked all the way through.

And here’s the finished product:

The combination of the buttery biscuits with the garlicky marinara sauce were molto delizioso! (Brittany, if you’re reading this, you can add Italian to my list of foreign languages that I know a few words of 🤣)

It took about 5 minutes to prepare, and I’m a sucker for anything that can go in the oven for dinner during the week. Between dinner, bath time, packing lunches, laundry and playing cars, I’m a fan of anything quick.

Here’s to hoping Tuesday isn’t as Monday-y as today was. Regardless of today, good things are coming in the near future! Stay tuned!
