Ranch Penne Pasta with Chicken and Vegetables

I’m a sucker for anything with noodles in it. Number 1, you can create a million and one recipes with them, and number 2, they’re the easiest things ever to cook with.

This recipe is only takes about 20 minutes to cook and is super delicious.

First, bring a pot of water with a pinch of salt to a rolling boil. Add a 1 pound box of penne pasta noodles to the water and boil for about 10 minutes.

While the noodles boil, cook 1 pound of shredded chicken on medium heat. Salt and pepper to season and cook until it’s no longer pink.

Drain noodles and reserve one cup of the water. Leave noodles aside.

Next, add the reserved water to the pot with 4 ounces cream cheese and 1 packet of dry ranch mix. Heat on low and stir until cream cheese is smooth.

Add in a pound of frozen mixed vegetables. Heat on medium heat about 6-8 minutes until vegetables are soft and heated completely.

Last, add in the chicken and cooked noodles and stir everything together until noodles are coated.

That’s it!

Eric is kind of picky when it comes to trying new things but the fact that he ate two helpings speaks for itself I think!
