This recipe is cooked in the crockpot and makes the most amazing, flavorful filling for sandwiches.
I honestly can’t believe that I haven’t gotten around to sharing this recipe yet. It’s one of my absolute favorite easy recipes. It graces my kitchen table pretty often!
My family can’t get enough of this crockpot crack chicken. With that being said, I hate even calling it “crack” chicken. Takes my mind to places other than the kitchen… anyway.
When I serve it, there’s no arguing or complaining or fighting about who wanted what for dinner. Everyone looks forward to it. And I think everyone needs one of those recipes – a go-to dish that doesn’t inspire controversy, something simple that everyone enjoys. An old fashioned good dinner. Well let me tell you, this is that dish.
It’s seriously one of the easiest dinner recipes ever, the kind of slow cooker dish that requires absolutely no work on your part. There’s no chopping to do, no browning, no mixing up a complicated sauce. All you have to do is get out your crockpot, toss in ingredients, and turn on the heat. After it’s cooked, you just shred the incredibly tender chicken and place it on a bun with a few other ingredients. Done. Delicious. Dinner is served.
It’s that simple.
You might be surprised that such little preparation can yield such awesome results. But when you think of this recipe, “tastefully simple” is the perfect description.
It’s not complicated or fancy, but it’s flavorful and never disappoints.
- 2 cans chicken, drained (or 2 pounds rotisserie chicken)
- 1 pack ranch mix
- 2 8 oz blocks cream cheese, cubed
- Bacon pieces
- Sliced sharp cheddar cheese
- Barbecue sauce
- Place chicken, ranch mix, cream cheese and bacon pieces in the crockpot and turn on low for 4 hours, stirring occasionally.
- Spoon mixture onto rolls. I use Hawaiian rolls but it’s also good on caramelized onion rolls.
- Top with a slice of cheddar cheese and barbecue sauce.
That’s it! Serve with some plain ole salty chips and you’re good to go.
