6 Point Breakfast

I have to share the most delicious breakfast I have made in the last 7 weeks. It was fast, which was my primary goal, but it ended up being so so good!

Sausage, Egg & Cheese Cups – 3 SP each

Preheat your oven to 350° and spray a nonstick muffin pan with cooking spray.

In a small bowl, mix one egg with the ingredients of your choice. I used turkey sausage (1/2 -1 ounce for 1 point) and grated Parmesan cheese (1/2 tsp is 0, but if you eat 2 egg cups, the Parmesan cheese is 1 point).

Feel free to use pork sausage, bacon, spinach, bell peppers, or any other kind of cheese of your choice. I just used what was low in points. I also had intended on adding garlic powder to mine but forgot.🙄

Pour mixture into one muffin hole (what are those even called?) in the muffin pan and repeat until you have mixed up as much as you need.

Top with salt and pepper and put in the oven for 15-18 minutes.

I topped mine with salsa (0 SP) because who doesn't love salsa on their eggs?

One large egg = 2 SP
1/2 ounce turkey sausage = 1 SP
1/2 tsp grated Parmesan cheese = 0 SP
Total for one egg cup = 3 SP
Total for two egg cups = 6 SP

I hope y'all have a good lazy (or productive) Sunday! We're off to the splash pad in a little while in this terrible Alabama heat. It was 82° by 10 am! I'm not mad about it though. Counting up my blessings and counting down the days until we're baking in the Florida sun!

By the way, a friend of mine recently got a bikini wax and her narration of the whole thing had me rolling. Then she told me I needed to go do it and blog about it.
