On today’s lunch menu: chicken salad. This recipe is super simple – not because I’m lazy (not completely, anyway) but because I don’t like a lot of the extras that people usually put in theirs.
Servings: a whole bunch Difficulty: low
What you need:
- 3 cups boiled chicken (or 3 cans chunk chicken)
- 1/2 cup sour cream
- 1 cup mayo
- 2-3 cups red grapes
- Salt and pepper
Shred up chicken in a large bowl.
Cut grapes into quarters and add to mixture.
Chill for a couple of hours. Serve on King’s Hawaiian Rolls for best flavor!
